What's On the Menu?

Tonight, I made HelloFresh's One-Pot Thai Coconut Curry Turkey Soup. It's a cozy, heartwarming dish that brings together turkey, bell pepper, sweet potato, and coconut milk for an incredible flavor experience. The long-simmered taste in just 30 minutes is a total winner in my book!

What I Received:

  1. 🦃 Ground Turkey
  2. 🍲 Chicken Stock Concentrate
  3. 🧄 Garlic
  4. 🧅 Yellow Onion
  5. 🍠 Sweet Potatoes
  6. 🍛 Curry Powder
  7. 🥥 Coconut Milk
  8. 🔔 Bell Pepper
  9. 🍋 Lime
  10. 🌶️ Sweet Thai Chili Sauce
  11. 🌿 Ginger
  12. 🌽 Cornstarch

What I Needed:

  1. 🌿 Cooking Oil
  2. 🧊 Sugar
  3. ⬜ Salt
  4. ⬛ Pepper

Instructions:

  1. 1. Prep & Mix Slurry: Wash and dry produce. Core, deseed, and dice bell pepper into ½-inch pieces. Peel sweet potato, then dice into ½-inch pieces. Peel and grate or mince garlic and ginger. Halve, peel, and finely dice half the onion. Zest and quarter lime. In a small bowl, combine cornstarch and water. Set aside.
  2. 2. Cook Veggies: Heat a drizzle of oil in a large pot over medium-high heat. Add bell pepper and sweet potato; season with salt and pepper. Cook, stirring occasionally, until lightly browned, 4-6 minutes. Transfer to a plate.
  3. 3. Cook Aromatics: Heat another drizzle of oil in the same pot over medium-high heat. Add garlic, ginger, and onion. Cook, stirring, until fragrant, 1-2 minutes.
  4. 4. Cook Turkey: Add turkey to pot with aromatics. Cook, breaking up meat into pieces, until browned and cooked through. Season with curry powder, salt, and pepper.
  5. 5. Finish Soup: Shake coconut milk in container before opening. Transfer veggies to pot with turkey mixture. Stir in stock concentrates, cornstarch slurry, coconut milk, chili sauce, water, and sugar. Bring to a boil, then reduce to a low simmer. Cook until flavors meld and sweet potato is tender, 4-5 minutes.
  6. 6. Finish & Serve: Stir juice from lime wedges into soup. Season with salt and pepper to taste. Divide between bowls. Garnish with lime zest. Serve with remaining lime wedges on the side.
