What's On the Menu?

I recently had the pleasure of making EveryPlate's Caramelized Zucchini Linguine. The combination of sweet caramelized zucchini with the lemony Parmesan cream sauce was out of this world. Simple ingredients, yet such an extraordinary taste. It was an easy and incredibly satisfying meal.

What I Received:

  1. đŸ„’ Zucchini
  2. 🍝 Linguine Pasta
  3. 🍋 Lemon
  4. 🧀 Cream Cheese
  5. 🌿 Italian Seasoning
  6. 🧀 Shredded Parmesan
  7. 🧅 Shallot
  8. 🧄 Garlic
  9. đŸ„Ł Vegetable Stock Concentrate
  10. 🌿 Parsley

What I Needed:

  1. ⬜ Kosher Salt
  2. ⬛ Black Pepper
  3. 🧈 Butter
  4. 🌿 Olive Oil

Instructions:

  1. 1. Start by boiling a large pot of salted water. Prepare your produce: wash and dry, then grate zucchini, slice shallot, chop garlic, zest and quarter lemon, and finely chop parsley leaves.
  2. 2. Squeeze the grated zucchini in a kitchen towel or sieve to remove excess liquid.
  3. 3. Cook zucchini, shallot, garlic, and salt in olive oil until caramelized. Add chili flakes if desired.
  4. 4. Cook linguine in the boiling water until al dente, then reserve some pasta water before draining.
  5. 5. Combine cream cheese, stock concentrate, Italian seasoning, lemon juice, lemon zest, and pasta water in the pan with zucchini. Simmer until smooth.
  6. 6. Add pasta, Parmesan, parsley, and butter to the sauce. Adjust seasoning and add more pasta water if needed. Serve with additional Parmesan, parsley, and chili flakes.
